This week Kacie Kelly & Conrad Reed tried to channel the spirit of Saint Patrick for this GREEN edition of Edible Bravery. At it’s core, it’s pancake hamburgers… But with an Irish twist, it becomes so much more. Check out the video & recipe below!

This recipe will not include the Irish twist. The only ingredients we added for St. Patrick’s Day were corn beef and green food coloring.
Pancake Hamburgers (with the worst-kept-secret “secret sauce”)
- ground beef
- 2 tbsp of onion powder
- 1 tbps of cayenne pepper
- 2 tbsp of parsley
- 1-2 tbsp of garlic salt
- salt and pepper (to taste)
- 1 onion, diced
- 3 tbsp of butter
- 1/2 carton of mushrooms
- 1/2 of mayonnaise (NOT Miracle Whip)
- 3-5 tbsp of ranch dressing OR 1 ranch seasoning pack
- pancake mix! (and whatever you need for your type of mix ex. milk, oil, eggs)
Let’s start with the not-so-secret, secret sauce.
Instructions:
Heat a pan to medium. Melt the butter. When the pan is warm and the butter is melted, put HALF of the diced onion in the pan, the other half will be used in the ground beef. Then add all of the mushrooms. Sauté until soft. Then add the mayonnaise and ranch. If it’s too runny for your taste, thicken it up with either flour or corn starch to make a more saucy consistency. Set aside.
Pancakes next, you want the “buns” to have time to cool off, but you want your burgers fresh off the skillet (or grill.)
Do I really need to explain how to make pancakes? Follow the instructions on your mix box. Make sure you cook it on a low-medium heat and DON’T flip until it bubbles in the very center of the pancake. You want a more firm pancake than you normally would.
Burger time. Even if you don’t like onions, put the onions in the ground
beef. Just do it and you won’t regret it. My fiancé hates onions, but won’t eat a burger any other way. Put your package of ground beef into a mixing bowl. Add the other half of the onion I told you to save earlier. Then add all the spices (onion powder, parsley, garlic salt, cayenne pepper, salt and pepper.) Now, get in there with your *clean* hands and mix it together.
When you form your patties, make them no larger than a half inch. Try to keep the onions covered by beef and not sitting on the outside of your patty, for cooking purposes. Heat your skillet to medium, or go toss your patties on a grill. Cook as desired, just make sure they are cooked.
Right before you’re going to eat, reheat that secret sauce! Either nuke it in the microwave or reheat on the skillet.
Assemble as desired (tomatoes, lettuce, cheese, etc.)
Final step? Devour & don’t tell anyone about the secret sauce.
