Instructions:
Sauce:
- 1-2 cup of cheddar cheese
- 1/2 cup of Parmesan cheese
- 2 tbsp of butter
- 1/2 cup of milk
- 1 tsp of salt
- 1 egg
- 2 cups of uncooked macaroni
Chili
- 1 can of black beans
- 1 can of kidney or red beans (DON’T DRAIN)
- ground beef ( the smaller package you can get at the store )
- 2 tbsp cumin
- 2 tbsp salt
- 2 tsp cayenne pepper
- 1 tbsp fresh garlic
- parsley to taste
- 1 small yellow onion (diced)
- diced tomatoes (Handful of cherry tomatoes or 1 large tomato)
- dash or garlic powder
- dash of onion powder
optional toppings:
green onions & sour cream 🙂
Directions:
Bring a pot of water to boil and preheat your oven to 400°
When water is to a boil, add a dash of salt before dumping pasta in. Cook till soft (DON’T OVER COOK.)
Pam a skillet, do not pour oil directly into the pan. Heat to medium. Before adding ground beef, season with the salt, cumin, cayenne pepper, garlic, garlic powder and onion powder, (parsley to taste.) Add ground beef and begin to brown.When the ground beef is about half way done, add onions. When ground beef is nearly complete add both cans of beans. Continue to cook until ground beef is done. Set aside.
While pasta is draining, begin melting the butter and add the milk into the pot you used to cook the macaroni. Bring milk and butter to a simmer. Add pasta back. Slowly add the cheese (leaving some for sprinkling on top just before baking.) Don’t forget the salt!
Turn the heat off, then crack and egg and stir well. Quickly add the chili mixture and dump EVERYTHING into a grease casserole dish. Sprinkle cheese on top!
Bake at 400° for 15 – 20 minutes.
Add optional toppings, enjoy!
