Edible Bravery – Avocado chocolate cake from listener Hilary Harris Beeckman of Grand Rapids!

 Instructions:

  • 3 cups of flour
  • 10-12 tbsp of baking cocoa (6-8 for the cake, 4 for the frosting)
  • 1/2 -1 cup of dark chocolate shavings (or chips, shaving can be hard to find, save extra 1/2 for shaving topping, optional.)
  • pinch of baking soda and baking powder or 2 tsp of ‘cake enhancer’
  • 1 tsp of salt
  • 2-3 mashed up (extremely mashed) avocados (1 for the cake, 1-2 for frosting)
  • 2 cups of water to make it vegan OR 1 and 1/2 cups of milk
  • 1 tbsp of white vinegar (honestly, if you don’t have vinegar, don’t worry about it.)
  • 1 cup of brown sugar
  • 3 cup of white sugar (1 cup for cake, 2 cups for frosting)

Directions: Preheat your oven to 350°

In one mixing bowl add your dry ingrediants: Flour, cocoa, chocolate shavings, baking soda/powder/cake enhancer and salt. Whisk together thoroughly.

In a separate bowl, add 1 mashed up avocado. SUPER mashed. Then add the vinegar and water/milk. It will be very watery, it’s supposed to do that. Whisk together until it makes a well-mixed, watery consistency. Then add both sugars! (1 cup of brown, 1 of white sugar.) Mix.

Slowly add the wet mix into your dry mix bowl. Beat together for about 2 minutes until cake-like!

Poor into a cake pan. If you split it between 2 pans, bake for 30 minutes (check after 20 minutes) If you pour all into one pan bake for about 45 minutes, (check after 30 minutes.) May take up to 50 minutes depending on batter consistency. Always do the toothpick check!

FROSTING:

Add the rest of your super mashed up avocados into bowl. Add the Cocoa powder and sugar. Stir well until thick.

DON’T frost until your cupcakes have completely cooled!

Add optional chocolate shavings on top!
